    What is Gelato?

    Gelato is a typical Italian delicacy.  Gelato is the Italian Style of daily fresh handcraft created ice-cream, made in small lots by artisans.  The product Gelato can be divided into two main categories:  Sorbet and Milk Gelato.

    Differences between Gelato & Ice-Cream?

    Ice-cream follows an industrial process.  Large continuous freezers produce, with the addition of high quantities of air (reaching an overrun of 100%), industrial ice-cream.  These products are distributed to the points of sale with a shelf life in the order of many months.  

    The fat content of industrial ice-cream is highly variable, ranging from 7% to as much as 18% for premium or super premium ice-cream.  Te average fat content of a Milk Gelato is 4-5%, the sorbet contains no milk fat at all.
