    Figs - Organic 

    So….a very close second to medjool dates, dried figs are one of my favourite things to eat! OMGosh so, so yum! I may or may not have been guilty of indulging on a few too many of these goodies in my time. Awesome. 

    Most people would be familiar of the fresh variety, but not a lot of you might have tried the dried variety. In my opinion, these are the tastiest….just my opinion though! These are easy to come by and can be bought in bulk at Nana's so grab a couple to try, or load up for a super healthy snack. 

    Nutritionally, figs are loaded with antioxidants, vitamin K, potassium, calcium, and magnesium and possibly more importantly, loaded with fibre. Dried figs have the MOST amount of fibre out of ANY other fruit! Impressive and good for your gut health! 

    Due to all these components, they are great at fighting free radicals and protecting your cells against damage. They can also help with weight loss by making you feel fuller for longer due to the fibre content. This in turn can assist in eating fewer calories. 

    All that aside, sometimes….ok most of the time it is good to eat stuff just cause it tastes GOOD! And let me tell you, figs do that amazingly! They are sweet, have a cool ‘crunchy’ type factor with their seeds and satisfy those with a sweet tooth. 

    They can be eaten on their own, used in salads, baking, meals, deserts and most recently I have discovered, they are ripper in smoothies! Mmmmm! Super versatile little fella! Given that these guys are not that expensive and readily available at Nana's, you gotta give them a shot. 

    This week I have decided to do some baking…..OK I was forced to due to losing footy a bet with a guy at work and had to cook something for the crew! So, I whipped up a favourite, Fig, Raspberry and Coconut Muffins! Fat free, sugar free and SUPER yum, give these guys a shot and even double the recipe and freeze some if you want them to last longer. Enjoy friends and catch ya next week! 

    Fig, Raspberry and Coconut Muffins 

    1 and a half cups of wholemeal flour 

    1 tsp baking powder 

    1 tsp bicarb soda 

    Half cup desiccated coconut 

    2 tsp apple cider vinegar 

    2 tsp vanilla extract 

    One third cup 100% maple syrup 

    Half cup coconut milk 

    2 tbsp chia seeds 

    6 dried figs chopped 

    Half cup raspberries 

    Third cup apple sauce. Pre heat oven to 180deg, combine all ingredients and put into muffin cases. Bake for 20min and enjoy!
