    Goji Berries 

     

    First of all I have to be honest and say that I have never tasted anything like the goji berry. They are super yum and a really individual fruit! Small in size, they pack a real flavour punch, that’s for sure. To describe their taste is difficult but they are sweet, and well, really different! Next time your in Nana's, grab a staff member and ask if you can try a couple to get the idea….really good!  

    Apart from tasting great, the goji berry has many health benefits. They have been used in Chinese medicine for about forever. With that kind of longevity, there has to be something behind it! They are super high in antioxidents, protein, and fibre, rich in vitamin C and E and carotenoids. Goji’s are also a rich source of LBP’s (Lycium barbarum)….these bad boys are anti-inflammatories, immune boosting, may help boost white blood cells (protectors of the body) and anti-aging.  

    In addition to all these benefits, the goji berry has been shown to help treat diabetes, high blood pressure, eye health, protect the bodies organs, boost metabolism, increase energy and even boost sexual performance! Talk about a good reason to include these in your diet!  

    Another really cool thing that I learnt about goji berries is that they have the potential to protect the skin from sun damage from the inside out! The high antioxidents circulate in your system and to your skin, protecting it from the sun’s damaging effects of ultraviolet light. Goji's even helped with inflammation if one got sun burned.  

    Goji berries can be used in so many different ways ranging from being juiced, put in soups, smoothies, trail mix, cereals, home made muesli bars, salads and eaten on their own. All are good options and ones that I have tried and love!  

    For your cooking experimenting this week, Tegan whipped up an incredibly yummy No-Bake Protein Goji Berry Granola Bar. Oh man, this has got to be one of my favorite things we have made in quite a while! So so good and so healthy! 

    For a pick me up in the arvo, a nourishing power hit after the gym or even for a quick breakfast, make these bars and love every bite, like I have!

     

    No-Bake Protein Goji Berry Granola Bar 

     

    Ingredients 

     1 cup rolled or quick oats (gluten free) 

     ½ cup cashew pieces, chopped 

     ½ cup almond, chopped 

     1 cup raw sunflower seeds 

     2 Tablespoons protein powder 

     ¼ cup ground flax seed 

     ⅔ cup peanut or almond butter (organic) 

     ½ to ⅔ cup agave nectar 

     ⅛ teaspoon sea salt (adjust based on which nut butter you 

    use) 

     ½ cup goji berries 

     1 Tablespoon cacao nibs (optional) 

     

    Instructions 

     

    Mix oats, cashew pieces, chopped almond, sunflower seeds, protein powder, and flax seeds in a large bowl.  

    Whisk together nut butter, agave, and sea salt. Pour into oat mixture and mix well, until everything is sticky and combined. If it’s too dry, add a bit more agave.  

    Add the goji berries and mix well.  

    Press mixture into a shallow baking dish that you’ve lined with parchment paper or plastic wrap. Cover with more parchment paper or plastic wrap, press well into the dish, and refrigerate for 4 hours. Cut into bar shapes, and keep refrigerated.
