    Nana's Bread Premix

    Nana’s Pre-Mix Bread Flour Recipes & Handy Hints

     

    Ingredient

    500g Loaf

    750g Loaf

    1kg Loaf

    Yeast

    1 1/3 teaspoons

    1 ½ teaspoons

    2 teaspoons

    Bread Mix

    400g

    500g or 3 1/3 cups

    600g or 4 cups

    Water

    (White Loaf)

    270mls

    350mls

    400mls

    Water (Wholemeal or Rye Loaf)

    280mls

    370mls

    420mls

     

    The only rule when using Nana’s Pre-mix is:       Keep the flour between the yeast and water. So add the yeast, pre-mix and then water to your bread maker.

    If using Nana's Premix in the oven reduce the above water quantities by 50ml.

     

    TIPS

    • Store yeast in an airtight container in the fridge.

    • Bread mixes will keep longer/better if kept cool.

    • Accurate measuring of all ingredients will give you more consistent results.

    In summer use cold water from the fridge.

     

    IF Problems Arise

    • If bread is heavy, or doesn’t rise or is a rough textured top: Increase water by 10 – 20mls.

    • If bread over rises and hits the roof or collapses in centre: Decrease water by 10 – 20mls.
