    Cacao Beans

     

    I don’t think there is anyone that doesn’t know what cocoa is.  That brown powder you bake with right….but what  is this business of cacao???  Well in simple terms, cacao (beans, nibs or powder) is the pure, unadulterated, unprocessed product from the Theobroma cacao tree.  Cocoa is the processed version that loses much of its nutrient value.   

    Apart from tasting amazing, there are a heap of health benefits of the raw cacao bean.  They are jam packed with antioxidants, magnesium and bliss nutrients.  They can be used in baking, snacked on, beautiful in rich dark chocolate, and used in cooking in general.   

     This week we road tested Loving Earth Raw Organic Cacoa Beans.  Oh man, they are SO good!  They can be eaten as is, or shelled (like a peanut) to do away with some of the coarseness.  If you haven’t tried this superfood, I recommend you grab some and give it a go.  The recipe that Tegan cooked could possibly be the nicest treat that she has ever cooked me!  The cookies are like a hybrid with a muffin with a beautiful crunch from the cacoa bean…YUM!  Give them a crack, you wont regret it!!!        

    POST BLOG COMMENT – These are VERY bitter on their own! If making these cookies, buy the shelled, crushed Cacao beans from Nana’s as peeling them takes FOREVER!!!! 

     

     

    Wholewheat Chocolate Cookies with Cacao Nibs 

     

    2 cups whole wheat flour

    Quarter cup unsweetened cacao

    Half tsp baking soda

    1 tsp salt

    1 cup shelled cacao nibs 

    3 tbsps flax seed plus 9 tbsps water

    Half cup brown sugar

    Quarter cup maple syrup

    Half cup olive oil

    1-2tbsps vanilla

     

    Stir flax seed with water, mix well and let sit for a few minutes. 

    Combine dry ingredients together and mix well.  In a separate bowl, combine wet ingredients.  Add wet to dry and mix slowly with hands till it all comes together.  Cover and refrigerate for half an hour to one hour. 

    Preheat oven to 150deg Celsius. 

    Line a baking tray with parchment paper.  Make mixture into balls with your hands and press gently onto the prepared tray.  Bake for 15minutes.  Allow the cookies to cool and then enjoy!
